Meeting w/ space users:

- Sierk talked to Max also, going to talk to him to get some ideas of what he needs for the drawings (eg tables for class)
- Joe: might be a code about how close food prep area can be to the sink. Should check w/ health inspector (Antonio). everything should be on wheels for cleaning
- Sierk talked to Max also, going to talk to him to get some ideas of what he needs for the drawings (eg tables for class)
- Jenny: Sin Fronteras asked for 10 sqft of dry storage
Refrigeration
- Compressor needed for walk-in - Rayc can help procure, Mary Ann's husband can install. Should we move it downstairs? Can be taken apart in panels
- ask Phat Beets about freezer storage
Windows
- Robb took the photos finally yay! sending the form in to Alba tomorrow
- SierK: someone at FNB said we should put windows on the interior side as well. Going to check out Neuman Hall on Monday and will take photos. Sierk is on kitchen archaeology project ^_^
- Robb: let's consider interior windows separately.
- Sierk: Lots of storage, need to estimate amount of wall space to include windows in the planset
- Robb: let's consider interior windows separately.
Floor
- Joe: tile and epoxy. apoxy has to be 1/4" thick, tile has to be 1/4" ceramic or quarry with 3/8" curve/cove along the edges. certain kinds of sheet vinyl are good, but hard to track down - and really hard to install (seams have to be heat- or chemically-fused. requested a few samples, trying to get antonio to give references. san jose had references of apoxys and vinyls. very complicated and toxic to put on. we can probably tile the floor ourselves.
- sierk: hard to keep clean b/c of grout lines
- gerald: there is an industrial paint for kitchens. apoxy-based. will look it up.
- joe: found a couple apoxy-based paints, will send them to the list. these apoxy products not just paints, 1/8" thick. at this point leaning toward tile with our label and apoxy grout
- rayc: can we get big tiles?
- joe: they crack too easily. will add mats after

Building/Structural
- Take down some of the drywall to look at wall under the shattuck windows beneath the hood (mounted on firring strips) to plan hanging the FRPs and how its going to integrate into windows
- Also need to look at the concrete and see if ????
- Joe will do that on Saturday, and see if there's any rain coming in
- Where two columns are
Plumbing
- old walk-in to have a mop sink possibly required by health for cafe
- mop sink on floor next to stove
- add any other questions for saturday to this section!
- Do we want a dishwasher or sanitizer - size? https://trello.com/c/enp2A9pi/28-dishwasher-or-sanitizer-size
- for the hot water worksheet, joe figured a low-temp dishwasher (up to 140)
- rayc: recommend a bar dishwasher in ballroom. electric
- research other commercial kitchen dishwashers (lothlotian, conveyor belt?)
- rayc: recommend a bar dishwasher in ballroom. electric
- for the hot water worksheet, joe figured a low-temp dishwasher (up to 140)
HVAC
- Robb has photos of intake into sudo
- Need to get model # of ballroom exhaust fan on roof
Equipment RAYC (Black & white) recommend a pizza oven for the kitchen. Pizza ovens can be used for multipal dishes, and are very low maintence. They also have large capacity for baking. They also do come in a dual stacked configuration as well, that takes the same floor space footprint. And or dual convection ovens. They cook food really fast, and are really solid. Also a large mixer. With the pizza oven, we would be able to host pizza party fundraisers with ease. Look into a Bar dishwasher for the bar in the Ballroom that has really short wash cycles.
