Ken - everything seems fine from of his perspective. need to start planning phase
Joe - seems like it's hard to stay focused on a clear list of tasks to be done
Sierk - sudomesh uses trello to organize tasks
consenus - make trello
Ken - demo can be done now. will need permits. willing to start tasks now.
Joe - need to know
- air flow capacity to kitchen
- can drain in kitchen be made operable
- the size of windows
- type of floor covering
- electrical circuitry
- about wall samples near vertical supports
- if we need new water & gas line (new plummer) ~ (??147 gallons/hour for dishwasher hot water heater pots sink & hand sinkhot water survey)
robb - just need to take pics of windows (action item)
Ken - wants to scrap the oven if we can
Joe - go for it
Sierk - having cleaning room next to kitchen would be best
Joe - may need to consult lighting professional
Sierk - we can research lighting requirements.
Ken - knows chef who could consult us on plan
Sierk - wants to go visit other local kitchens
Ken - fermentation will need some space for equipment
robb - will be meeting with Nina from Mandela Marketplace within two weeks
