  • Discuss appliances we want in the kitchen to solicit bids from restaurant supply stores
    • Dishwasher - conveyor belt type is more expensive but useful for frequent large loads of dishes
    • Mop sink
    • Dehydrator (CCL)
    • Freeze dryer (Ken has a connection)
      • may be expensive
    • Coffin-style deep freezer (CCL)
    • Walk-in fridge (Mary Ann's husband, Jose, could install the condenser we need)
      • Phil: expresses concern about FNB being able to keep it organized and maintained well
    • Wheelable stainless steel racks
    • Grease Traps (x2)
    • Ventilation upgrade
    • Commercial ice-maker
      • Ken: can you hack these to adapt for makin juice cubes?
    • Dumbwaiter
    • Utensil Racks
    • Stainless steel prep tables
    • Free-standing commercial refridgerator
    • Convection oven?
  • Mandela Foods has expressed interest in helping by conducting workshops on managing and using commercial kitchens
  • Discussion of monitoring kitchen use/abuse through implementing keycard access
  • Phil: Stove - we can get started on that -
    • scrape out the rest, pressurize to test the gas lines, pressure-wash it
