- jim hadn't seen our equipment list. we printed out some copies and shared the docs with him
- walk-in storage super important for fnb (and phat beets) - existing walk-in in jim's drawing arthur has suggested to expand the width of
- planning for a bathroom down there now would be crucial, need to spec out plumbing, see where it would fit best.
- tile much cheaper than epoxy (1/4" thick and is thus very expensive - may be obligated to hire a professional applicator as well). even the dry storage area needs to be tiled or epoxy'd.
- wherever we spec out future bathroom (maybe next to furnace room?) we should also place the mop sinkb
- full catering & ABC license - $13,800 from ABC (plus you have to win the lottery and have a fully-functional, permitted commercial kitchen)
- save a piece of cement before pouring (to prove its 'hardness' to inspectors
- extensive discussion about how to move incoming produce and outgoing dishes between basement kitchen, cafe/entrance hall, and ballroom bar. potential easy routes between kitchen and ground floor include the closet area in the pink classroom or some area between the south end of the ballroom bar and the stairway there. what was the empty chute along ballroom southeast stairwell down to basement?? jenny has an android phone camera extender w/ light to investigate further..

FNB:
- 28" wok
- 17" x 19" deep pot (largest)
- street kitchen setup including EZ-UPs, tables, propane stoves, etc;
Phat Beets:
- Area across from walkin (hella crates, coolers, fridge/freezer)
- Northeast closet off kitchen (serving supplies, mostly)
- raised stage area in basement (can this be pared down or consolidated better?)
- full shelving unit (produce etc) at their currentrented kitchen space
budget changes
- 2 x 6-burner wolf range?
- quarry tile instead of FRP?
- hiring a General Contractor to oversee - put out a call for bids, bid by the job - dk suggests James (who yar says is really busy - dk says would probably take on a larger project like this one)
- raise the cost of the windows - Alba(?) quoted DK at $14K - we've budgeted about $7.5K
- raise cost of walk-in to something closer to $10-15K
